The cooks revive forgotten flavors that the guests can enjoy in the wood-scented dining room with its imposing stone fireplace, or on the terrace in fine weather. The menu offers an unexpected exploration of the senses. The vegetables cultivated in the garden and the fruit are carefully selected, making the most of biodiversity.
The full-bodied taste of the meat is enhanced in rich Tuscan recipes: pieces of pig’s liver and fennel seeds, local sausages, the traditional bread and bean soup called ribollita and then pasta with black-leaf kale pesto, baked squash and chestnut mousse. Every meal is accompanied solely by quality wines, specially selected to bring out the flavors of the local cooking.

At Villa Ferraia the flavors satisfy the body just as the places set aside for refreshment buoy the spirit. The dining room conjures up stories of the past, from the paintings of ancestors on the walls to the large chandeliers of hand-wrought iron; while the diners are kept warm in cold weather by a grand fireplace built of travertine. In the evening everyone gathers around the long wooden table that can seat up to thirty people. The hosts have taken care over every last detail in order to create a warm and refined atmosphere: ceramic plates, crystal glasses, candles.
During the spring and summer the residence opens up its terraces: meals are served in the Domus, the Roman-style gazebo set in a scented garden with a view of the woods, or in the Rotonda above the Vegetable Garden, under a canopy next to the barbecue.

It is possible to reconstruct the chain of production of every type of food. The joy of the palate becomes a delight for the eyes when you visit the organic vegetable garden, where the owner of the villa selects and plants indigenous varieties that have survived the standardization of markets. These include such old varieties as the yellow tomato, the almost extinct carota bastoncello or “rod-shaped carrot”, the summer squash and such tasty types of fruit as the ciucca apple, the briaca pear, the doughnut peach and the casolana apple.
